| Vinificatie | The grapes for this wine come from 5 small, old vineyards in the hills north of the Serra de Montejunto, some 50km above Lisboa and not far from the Atlantic coast. The soil is mainly calcareous. The altitude of the vineyards, the orientation to the north and the proximity to the ocean maximise the cooling of the vines so that the acidity in the grapes is preserved and the basis for a finesse wine is guaranteed. Cultivation is biodynamic and no cultured yeasts are added to start fermentation either. |
