Seventy per cent Malvasia with a remainder of Bastardo Branco, Formosa and Poilta alongside, from old vineyards in Trás-os-Montes — the coldest and most remote corner of Portugal. The grapes are crushed by foot and then pressed, and the wine ferments in steel with natural yeasts only. Nothing else happens. Complexity ten against a weight of nine, with an acidity that stays upright thanks to the altitude: the wine of a region almost nobody has on their list.
