Waar serveer je ’m bij?
Note: this is not a white wine but a palhete, the old Portuguese way in which red and white grapes went into the vat together. Touriga Nacional with Encruzado, Barcelo and Cerceal, fermented together, without oak. The result is light red in colour and light in weight, with red fruit, spice and a freshness you would sooner expect from a white. Serving it cool is not a trick but the point: at cellar temperature it becomes the bottle that clears both fish and meat off the plate, and almost no other wine can do that.

Anything really thickened or really heavy: it has little tannin and little volume, so a stew or a dark gravy swamps it. At room temperature it also loses all its charm.
