Waar serveer je ’m bij?
From a clay-limestone parcel in Carcavelos, the near-vanished appellation west of Lisbon. The bunches went into the vat whole, were crushed and stayed a week on the skins. A week of whole bunches gives scent and tension without driving up the tannin. Red and white varieties mixed, twelve degrees, and the saline edge you expect in that spot.
Cod loin with peas and bacon
Grilled quail skewers with bay
Serveren op 13–14 °C
Drink: 2023–2028
