Waar serveer je ’m bij?
The most concentrated and the oldest of this series. Trodden in open lagares and then left for years in used wood — the Bairrada tradition of keeping, at full length. Twelve years after the harvest the primary fruit has moved on into leather, dried herbs and forest floor, with the tannin undiminished underneath. This is a wine you choose for intensity, not for weight.
Brasato al Barolo — beef braised for hours in red wine
Wild boar stew with bay
Serveren op 16–17 °C, two hours in a decanter
Dirk Niepoort's impact on the Portuguese wine landscape can hardly be overestimated. When he took over the helm from his father Rolf in 1990, as the 5th generation of the originally Dutch Van der Niepoort family, it was immediately clear that something was about to happen.
