O Abanico Reserva branco 2023
Region: Dão
Producer: Casa Da Passarella
Literally, *Abanico* means "fan"—not the sort of simple paper fan used to beat the summer heat, but the elegant fans made of fine fabric from the Victorian era, which served more as status symbols than as a means of cooling off.Casa da Passarella drew inspiration from the story of a Spanish noblewoman who once lived at the estate and was known for always showing off a hand fan; the name highlights the wine's elegance.
This is a full-bodied white Dão, yet it retains the lovely acidity characteristic of the region, ensuring the wine remains elegant throughout.

One hundred per cent Encruzado, the white grape the Dão owes its reputation to, and here deliberately made on a grand scale: twelve months in oak barrels, some of them new. That oak is not there to perfume but to build — it gives volume, a creamy mouthfeel and a toasted undertone beneath the yellow fruit. The name refers to the smart fan of expensive fabric from Victorian times, more a status symbol than a way of cooling down, and you can hear that ambition in the glass. A wine like this asks for fat or a roasted crust across from it; on a lean plate only structure is left.
Tagliatelle with smoked salmon and cream
Pan-fried gurnard with lemon butter
Serveren op 11–13 °C
Wine has been produced on this estate for centuries, but the previous owners lost interest in winemaking. In 2008 the estate came into new hands and since then the driven Paulo Nunes has been at the head of wine production.
