| Vinification | In stainless steel tank, with natural yeasts only. The grapes were foot-trodden and then pressed. After a light settling, the must was transferred to a stainless steel tank for fermentation. |

Waar serveer je ’m bij?
Sixty per cent red grapes, forty per cent white, fermented together — the old northern way, which the Portuguese call a clarete. All in steel with natural yeasts, the grapes foot-crushed and then pressed. Twelve and a half degrees, and a colour lighter than you expect from a red; the white grapes bring acidity and scent an ordinary red does not have.

The producer
Menina d'Uva
Aline Domingues, the girl (Menina) of Uva, as she calls herself, grew up in Paris. She studied and worked briefly as a microbiologist, researching the dna of yeast cells.
