| Vinification | From vines that are a little less than 15 years old. The must is placed in small open 1 m³ decanters where it stays for 24 to 36 hours in order to decant by natural precipitation. At the end of this operation, the must is transferred to stainless steel vats where it is fermented with temperature control. The wine is fermented solely by the indigenous yeasts of the grape, without the addition of enzymes or other yeasts. |

From vines of just under fifteen years, and a vinification that is strikingly old-fashioned: the must first stays twenty-four to thirty-six hours in small open tubs of one cubic metre to settle naturally, without machine or aid. It then ferments in temperature-controlled steel, solely on the grape's own yeasts and without added enzymes. Maria Gomes and Bical, no oak: with weight seven and acidity five, the freshest white Bairrada of the house.
Mussels with Thai herbs
Herring fillet with apple and gherkin

Frederico and his father Mario Sergio are the third and fourth generations of the Nuno family who make wine in the north of the Bairrada region. They make wines and espumantes that are very easily recognizable for their distinct character.
