| Vinification | A distinctive feature of this wine's vinification is that 30% of the grapes enter the fermentation vessel uncrushed. The remaining 70% are pressed, and that juice is added to the uncrushed grapes. Half of the juice ferments in old wooden barrels, while the other half ferments in stainless steel tanks.
The aim of this unusual method is to extract aromas from the skins without resulting in a typical 'orange wine'. In other words, the goal is a wine that is full of flavor yet highly drinkable—the signature style of all Nat'Cool wines.

|
