Waar serveer je ’m bij?
The accessible brother of the Saes Reserva, from a vineyard with vines around twenty years old — young, in Dão terms, and you notice it in how early this wine is already drinking well. Encruzado, Bical and Cercial, partly in steel and partly in used oak barrels. Used oak matters here: it gives texture without an oaky flavour, so the wine feels rounder in the mouth without vanilla or coconut landing on your plate. That combination — round enough for a sauce, fresh enough not to sag along with it — is rare in this price bracket.

Alvaro Castro ruilde Lissabon en een diploma burgerlijk ingenieur in voor Pinhanços, aan de voet van de Serra da Estrela, en zette haast in zijn eentje de Dão weer op de kaart. Op Quinta de Saes en Quinta da Pellada maakt hij wijnen met fijne tannines, een frisse kern en veel lengte. Wij volgen hem sinds 2003.
