| Vinification | The vineyard for Amphorassic is 48 years old and consists of a limestone soil. All grapes were harvested on Sept. 20, 2021, selected in the vineyard and transported to the winery in 12-kg boxes. At the winery they were lightly crushed and for 9 months the entire bunches were macerated in 300-liter Amphora. The juice was then pressed in a vertical press and it transferred to used barrels for clarification. |
| Ripening | The wine aged the entire time in terracotta amphora and then stayed briefly in wooden barrel before being bottled in 2023 using only gravity. |
