| Vinification | The grapes were harvested on Sept. 16, 2020 and selected in the vineyard in 12-kg boxes (the smaller the crates in which the grapes are transported, the less likely a grape will be bruised prematurely and the juice oxidized. At the winery, the grapes were lightly bruised and underwent a 5-day maceration of whole bunches. They were then pressed in a vertical press and the juice transferred to 600-liter barrels. |
