More than ten varieties mixed together from old vineyards, fermented and aged a few months in terracotta amphorae — talhas, a technique that has lasted two thousand years in the Alentejo. Amphora rounds without oak flavour, and the cool hills of the Serra do Mendro keep the acidity upright. This wine therefore stands a long way from the modern, powerful Alentejo.

In Vidigueira, wine has been made in amphorae for 2,000 years, but it was always drunk young and locally. In 2019 Teresa Caeiro bottled her family's talha wines for the first time, introducing the world to this age-old tradition.
