Waar serveer je ’m bij?
Palhete is the old Portuguese way: red and white grapes fermented together, here Aragonês and Trincadeira alongside Antão Vaz. Fully destemmed, lightly crushed, then fermenting in tarecos — three-hundred-litre terracotta jars that every farmer in the Alentejo once kept at home. No temperature control, indigenous yeasts, and a colour somewhere between red and rosé.
