Waar serveer je ’m bij?
The same wine as the 2025 but a year further on, and that year in bottle does exactly what you would expect: the sharpest of the acidity has been rounded off, the citrus has shifted towards yellow fruit and there is a little more weight in the mouth. Still pure Sercial, still nothing but steel and gravity, but it now sits more calmly in the glass. That makes it somewhat better suited to a warm plate than the younger vintage, which still wants mainly aperitif and cold dishes.
