Waar serveer je ’m bij?
Nat'Cool lays down the rules: natural vinification, no oak, and it has to drink light. With its cool climate the Dão is the best-placed region in Portugal for that. Five indigenous grapes, all in steel, and a line of acidity that keeps the bottle fresh to the last glass. Juice rather than structure, and that is precisely the point.
