Bruto natural betekent zonder dosage: er is geen druppel zoet toegevoegd om de hoeken af te ronden, en dat maakt deze bubbel kurkdroog en recht. Maria Gomes, Bical en Cerceal uit Bairrada, de streek die in Portugal het langst mousserende wijn maakt. Zonder dosage valt er niets te verbergen, dus je smaakt het zuur en de druif zoals ze zijn — en dat is precies waarom hij aan tafel beter werkt dan een zoeter gedoseerde bubbel.

“The sparkling 2023 Espumante Bruto Natural Branco was produced with María Gomes and Bical grapes and, like all their sparkling wines, didn't see any addition of sugar and is a brut nature that refermented in bottle following the traditional method. It's young, fresh and fruit-driven with notes of green apples, abundant small frothy bubbles, 12.5% alcohol and a dry finish with the chalky mouthfeel and the texture from the bubbles. 56,520 numbered bottles produced.”
Frederico en zijn vader Mario Sergio zijn de derde en vierde generatie van de familie Nuno die wijn maken in het noorden van de Bairrada-regio. Ze maken wijnen en espumantes die heel makkelijk herkenbaar zijn door hun uitgesproken karakter.
