The second Espumante by Filipa Pato. White sparkling wine brut nature from Bairrada, Portugal. A very old region of glowing valleys, since centuries known for the production of wines of excellent quality of Cerceal, Bical and Maria Gomes.Very mineral nose with a certain smokiness due to the limestone soil. It has a distinguished fruity touch of pears (typical Bical) and fennel. After some time in the glass it even reveals thyme and honey.
The mouth is refined, creamy, relatively smooth and has a present minerality. The middle palate is fruitdriven and the aftertaste is dry and refreshing.

Filipa Pato's sparkling wine from three white Bairrada grapes: Bical, Maria Gomes and Cercial, hand-harvested and pressed very gently. Fermentation starts in tank on wild yeasts, then nine months sur lie. Eleven and a half degrees of alcohol, so you hardly notice it, and a line of acidity that wipes the mouth clean. Far scarcer than the rosé of the same name, and to our eyes the more interesting of the two.

The daughter of a renowned winemaker, Filipa Pato chose to assist her father, yet also start her own winery in addition. We were there even before the first wine was bottled and we are still following her.
