Waar serveer je ’m bij?
One single vineyard with fifty-five-year-old vines on limestone and sand, behind the dunes by the ocean. After a light crushing the whole bunches steep for five days, then a gentle pressing in a small vertical press — the old-fashioned way, which presses less hard than a modern one. Then twenty-three months in old barrels. Eleven degrees of alcohol and still complexity eleven: little weight, many layers, and a saline finish that comes from those dunes.
Pan-fried grey mullet with bay
Grilled mackerel with rhubarb
Serveren op 10–12 °C
Under the name Marinho, he makes wines that we can only describe as ‘unique’. So unique, in fact, that Luis adds a whole new dimension to the world of wine.
