| Vinification | Drop is a blend of mainly white grapes and a small percentage of reds. The juice fermented spontaneously after 3 weeks of maceration with the skins. |
| Ripening | 22 months in 228-litre barrels. Bottled in August 2022 using only gravity and without the addition of sulfite. |
