Docil means docile, and that is meant ironically: Niepoort went to Ponte de Lima for the Loureiro of that subregion and made a wine there with an acidity that is anything but docile. Three months of very slow fermentation on the grape's own yeast cells, and deliberately no malolactic fermentation — that is the key: the sharp malic acid is therefore kept entirely. Five months in steel, no oak. Eleven and a half degrees, granite soil, and a finish that tends towards lime zest and blossom.

Dirk Niepoort's impact on the Portuguese wine landscape can hardly be overestimated. When he took over the helm from his father Rolf in 1990, as the 5th generation of the originally Dutch Van der Niepoort family, it was immediately clear that something was about to happen.
