A vineyard of a hundred and twenty years with dozens of varieties mixed together, one day of maceration with the stems, and then fermentation and twenty months of ageing in the same wooden barrel. Bottled by gravity, with no added sulphur. Ten and a half degrees of alcohol with complexity thirteen — that is the ratio Luis Gil is chasing: as little weight as possible, as much to tell as possible. Give it air, it opens slowly.
